Classic Stuffing

  • 2 baguettes or country-style or sourdough bread loaves (about 1 lb.)
  • 1/2 (1 stick) unsalted butter, plus more for baking dish
  • 1 large onion, finely chopped (about 2 1/4 c.)
  • 4 stalks celery, thinly sliced
  • 2 cloves garlic, finely chopped
  • 1/2 chopped fresh parsley
  • 1 fresh sage leaves, finely chopped
  • 1 fresh thyme leaves, finely chopped
  • 11/2  chopped fresh rosemary
  • Kosher salt
  • Freshly ground black pepper
  • 4 low-sodium chicken or vegetable broth
  • 2 large eggs, beaten to blend
delish-classic-stuffing

Step 1: Tear or slice bread into 1/4″ cubes. Arrange on a baking sheet or transfer to a large bowl and leave out overnight to dry. (Alternately, place bread on baking sheets and bake at 200º until dried, about 20 minutes.)

Step 2: Preheat oven to 350º. Grease a 13″-by-9″ baking dish with butter.

Step 3: In a large skillet over medium heat, melt 1/2 cup butter. Add onion and celery and cook, stirring occasionally, until softened and fragrant, about 8 minutes. Stir in garlic, parsley, sage, thyme, and rosemary and cook, stirring, until fragrant, about 1 minute more; season with salt and pepper.

Step 4: Place bread in a large bowl, add onion mixture, and toss to combine. In a medium bowl, whisk broth and eggs and pour over bread mixture; generously season with salt and pepper. Toss until completely coated. Transfer mixture to prepared baking dish and cover with foil.

Step 5: Bake stuffing 45 minutes. Uncover and continue to bake until bread is toasted and golden brown, 15 to 20 minutes more.

Butternut Squash Mac ‘N Cheese

  • 4 (20 ounces) frozen butternut squash cubes
  • 4 butter
  • 1 kosher salt, divided
  • 1/2 freshly ground black pepper, divided
  • 1/4 all-purpose flour
  • 2 whole milk
  • 1/2 garlic powder
  • Pinch cayenne pepper
  • 1 chopped fresh thyme
  • 4 shredded cheddar
  • 4 goat cheese
  • 1 large shells or other short pasta

Step 1: Bring a large pot of salted water to boil over high heat.

Step 2: In a large skillet over medium-high, combine squash and ¼ cup water. Cover and cook (uncovering to stir occasionally), until tender, 5 to 7 minutes. Uncover and continue to cook, stirring constantly, until liquid evaporates, 2 to 3 minutes.

Step 3: Add butter, ½ teaspoon salt, and ¼ tsp pepper and stir until butter is melted. Add flour and stir to incorporate. Cook, stirring constantly, until squash mixture thickens and raw flour has had a chance to cook, 2 to 3 minutes. Gradually add milk, stirring constantly. Add garlic powder, cayenne, and thyme and bring to a simmer. Add cheddar and goat cheese, stirring until melted. Remove from heat and let cool slightly.

Step 4: Add pasta to boiling water and cook 3 minutes short of package instructions. Drain, reserving ½ cup pasta water, and return to pot.

Step 5: Meanwhile, transfer squash mixture to a blender and puree until smooth (you should have just over 4 cups).

Step 6: Place the pot with cooked pasta over medium-low heat and stir in sauce until coated. Remove from heat and let cool 5 minutes. (If sauce looks thin, don’t worry—it with thicken as it begins to cool.) Add splashes of pasta water to loosen until you’ve reached your desired consistency.

Pumpkin Pie Ice Cream Sandwiches

  • 3 cups canned pumpkin
  • 3/4 teaspoon pumpkin pie spice
  • 2 cartons (1-1/2 quarts each) vanilla ice cream, softened if necessary
  • 1-1/2 cups sugar
  • 3 large egg yolks
  • 3 tablespoons pumpkin or apple butter
  • 1 teaspoon vanilla extract
  • 2-1/4 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/8 teaspoon salt

Step 1: In a large bowl, mix pumpkin and pie spice until blended; stir in ice cream. Freeze, covered, until firm enough to scoop.

Step 2: In a large bowl, cream butter, shortening and sugar until light and fluffy. Beat in egg yolks, pumpkin butter and vanilla. In another bowl, whisk flour, cream of tartar, baking soda, pie spice and salt; gradually beat into creamed mixture (dough will be soft). Refrigerate, covered, 30 minutes or until firm enough to shape.

Step 3: Preheat oven to 325°. Shape dough into 24 (1-in.) balls; place 4 in. apart on ungreased baking sheets. Flatten to 1/4-in. thickness with bottom of a glass dipped in sugar.

Step 4: Bake 6-8 minutes or until edges are light brown. Cool on pans 2 minutes. Remove to wire racks to cool completely.

Step 5: To assemble, spread a scoop of ice cream on bottom of a cookie. Top with a second cookie, pressing gently to attach. Place on a baking sheet; freeze until firm.

Step 6: Repeat with remaining ingredients. Wrap individually for longer storage.

9 Reasons to Own a Dog

You have been thinking about it for months—even years. The timing has never been “right.” You have been making excuses for why owning a pet wouldn’t be a good fit and how much responsibility it would take. Think about it no further! At Crest apartments, we take great pride in welcoming pets into our community. We genuinely believe in the many benefits of pet companionship. To help give you some ideas about why owning a pet would be good for you mentally and physically, we’ve compiled our top reasons we believe dogs really are a person’s best friend.

A Dog helps make your WFH day more stress-free:

Research has shown that employees who bring their dogs along to the office report higher satisfaction. In addition, simply having your dog close by for tasks at home and work can reduce stress. Having a furry companion can help add some excitement to your home office days as we all continue with our work-from-home journey.

They will keep you in good shape

Dogs are active creatures and will help bring out the same in you; who could refuse a walk or a round of fetch from a smiling, slobbering face.

They can help improve your social life

Getting out to the park and mingling with other dog-lovers is a great way to meet like-minded people, and you may even make a new friend. Living at Crest Apartments gives you convenient access to some of the best dog locations just minutes away in the Capitol Riverfront area.

They can help reduce your heating bill

Snuggling up to your furry friend is not only good for the soul, but it can also serve as an extra layer of warmth. So in the winter months, grab a cup of tea and some quality couch time, then watch your heating costs fall.

They will never judge you

Whether you’re hanging at home on a Saturday night or crying over spilled milk, your pup will never think less of you; in either scenario, they’ll probably thank you.

You’ll never eat alone again

Through every snack, every meal, they’ll be there. Watching. Waiting.

They will teach you how to live in the moment

Dogs will never forget the people who care for them, but they tend to live for the moment by nature. From the sensation of the wind blowing in your hair to the importance of a quality belly scratch, your pup can teach you a thing or two about enjoying the simple pleasures in life.

They are incredibly loyal creatures

They will, without a doubt, be by your side through thick and thin; all you have to do is walk through the front door.

Pets can boost your immunity

According to a study at Wilkes University, simply petting a dog can up your levels of immunoglobulin A, an antibody that fights off the common cold. In addition, having a companion to provide social support will boost your resistance to disease and infections.  Additionally, dogs tend to track in just enough germs to help build immunity.

Fall Decor Ideas For Your Apartment Home

A brand new autumn season is among us, which means another opportunity to show your festive creativity! There’s something about the fall season that awakens all of our crafty mindsets, and as an apartment renter, this serves as a perfect excuse to add a new seasonal look to your space by decorating your butt off! There are many ways to begin adding a fall feel to your apartment space, whether you’re looking for a more subtle design or something a little louder. Below we have included some quick tips to begin the process of creating a beautiful fall aesthetic for your apartment home.

Pumpkins are a must

Anyone that enjoys the fall season knows that pumpkins are the official mascot of the season! What better way to show your excitement for the season than with a collection of prop pumpkins! Apartment dwellers can display the pumpkins in their bathrooms, on a window ledge, or at another location in your apartment that will allow the pumpkin decor to pop!

Fall Wreath for your apartment door

For those apartment renters that like to add a sprinkle of DIY to their design process, a fall wreath is a perfect way to accomplish both of those things! One of the best things about displaying a wreath on your apartment door is that it allows you to share the fall spirit with all of your neighbors every time they walk by.

Click here to see some cool fall wreath designs you can create for your apartment door.

Fall candle scents

A delightful scent is an easy way to immediately bring the feel of fall right into your apartment home. Having an autumn candle collection for the season is essential to ensure that fall smell never leaves your apartment. Some of the must-haves for the season include apple, cinnamon, pumpkin spice, and clove.

Decorative Pillows

Another great way to add some fall flavor to your apartment home is to swap out your current pillow collection with a more cozy style! Having this collection will instantly make your living room area explode with fall design magic. Then, take things a step further by adding seasonal colors to the collection to create an even more fall aesthetic every time you walk into the space.

Flex your Fall Green Thumb

Just because the summer season is over doesn’t mean you can’t have greenery in your apartment home! Plants like dahlias, ranunculus, and even leaves and branches serve as a tremendous seasonal feature for your apartment. To add an extra layer, apartment dwellers can place their fall greenery in a rustic-style holder for an added fall effect.

4 Apartment Lessons for 2021

As we kick off the first week of the new year, there are probably many things you’re looking forward to leaving behind in the previous year. Rightfully so, 2020 was an indescribable year; it left many us in an unfamiliar place, and in turn, have you believing that nothing good came from it. Yes, that year was very challenging, and while it might be easy to want to forget 2020 entirely, there are many things to take away. We learned a lot about ourselves; we found out how strong we can be, we found out creative we can be, we found out how patient we can be. These lessons and realizations will continue to help us as we navigate into 2021.

Last year, we became more familiar with ourselves; we got more familiar with something else, too—our apartment homes.

As an apartment dweller, you spent more time inside of your four walls in 2020 than any other period before. This time made you realize that your apartment space needs a fresh look going into a new year after months of looking at the same decor and stylings.

If 2020 didn’t teach us anything else, it taught all of us how to get creative with our spaces in more ways than we can imagine. Use that same energy to add some new life into your area for a fresh 365 days.

Below are four apartment features you must have for 2021.

A REAL “ WFH” Station

Last year could have easily be defined as “The year we all started working from home.” While that caught pretty much all of us off guard in 2020, 2021, there is no excuse not to be fully prepared for however much longer we will be working from home.

For those apartment renters’ that don’t have an extra room to set up as an office area, there are several ways to accomplish remote work productivity in a small apartment space.

Below are a few helpful articles you can read to start your journey of mastering your apartment workspace.

Secrets to working from home in a small apartment

How to cram a home office into a small apartment

Making a makeshift work from home space

New Cooking Supplies

In 2020, we all took home cooking to new heights! All the extra time spent inside our apartment homes had a lot of us mastering old recipes while simultaneously exploring brand new ones.

While doing so, the cooking tools that you previously use on occasion went into overdrive.

As we move into the new year, add a fresh look to your kitchen by purchasing some new cooking essentials. Like most newly discovered apartment chefs, you’ve probably already found some new kitchen gadgets that will make your cooking experience that much better!

Here is a list of a few must-have tools for your kitchen going into the new year.

Working out from Home Equipment

Last year, we had to get used to working out from home. Even though our gym has since reopened using COVID-19 protocols, some apartment-dwellers might have found an at-home workout routine that does the trick!

Start your new year off with some fresh workout equipment.

Here are some excellent fitness equipment options for your apartment home.

Apartment Organizing Tools

In 2020, we learned of all the purposes that our apartment homes can serve; our spaces became art studios, gyms, movie theaters, and more! With all of these activities, keeping your apartment home organized became that much harder.

Here are some apartment organization tools you need for a productive 2021.

Last year took us for an unexpected ride. And there’s nothing like that “fresh start” feeling. But as we attempt to make this year the best one we’ve ever had, let’s not forget the lessons learned in 2020 that will benefit us greatly in this current year.
